I’ve always imagined world expos as glimpses into what the future might hold, showcasing remarkable innovations. Past events have featured concepts like personal jetpacks and advanced transportation systems, capturing our imagination.

Yet, at the Osaka-Kansai Expo, the futuristic vision seems less pronounced, particularly with the debunking of flying car rides. Instead, I’ve found something more unexpected but captivating: the Sushiro to the Future: Expo Edition restaurant.

This unique establishment is located in the Forest of Tranquility area of the Expo and will be open from April 13 to October 13. The design is visually striking, featuring a façade that invites curiosity.

As I step inside, I’m greeted by a high-tech ambiance, starting with a virtual aquarium in the lobby that sets the tone for the experience ahead.

Inside, each dining table features a large touchscreen display where images of sushi and other dishes glide by, allowing guests to tap and order with ease. Once selected, the real food arrives on a conveyor belt system designed for quick service.

This innovative ordering system enhances the flow of dining, as each table is equipped with an offramp for easy retrieval of plates. The arrangement is efficient, enabling patrons to enjoy their meals without delays.

An interesting twist at this Expo location is the exclusive Uni Catch Game, integrated into the dining experience. During designated times, the screens switch to game mode, challenging diners to tap as many sea urchins (“uni” in Japanese) as possible within a time limit.

Afterwards, the top five scores from different tables receive prizes, adding a fun competitive element. The staff, aptly chosen for their experience from other Sushiro branches, actively cheer on participants, enhancing the entertainment value.

Though the technology is impressive, it’s the concept of the Sushi of Tomorrow that truly highlights this venture. The seafood served here is sustainably farmed on land, significantly reducing harm to ocean ecosystems.

This commitment to ecological responsibility extends to all ingredients, including seaweed and shellfish.

Diners can expect a variety of offerings such as land-farmed sea urchin, mackerel, conger eel, salmon, and more, all priced between 270 to 550 yen per plate.

This dedication to sustainability ensures that the seafood features a cleaner taste and texture, thanks to the controlled diets and living conditions of the fish.

Moreover, this Sushiro location respects diverse dietary needs. No pork or lard is included in any of the menu items, even extending to popular dishes like tonkotsu ramen.

The restaurant also offers five different plant-based items, catering to those with various dietary restrictions. I’m particularly curious about how they create plant-based ikura (salmon roe), and I look forward to sampling this innovative approach.
